Happy Monday {23rd ed.}

Happy Happy Monday!! Here is what is making me happy...

Being 28...and ice cream cake! :)
As I have mentioned before, Im not exactly a typical 20 something, so I actually greatly enjoy my birthdays and getting older so my chronology matches my felt age! (Remind me that I said that when I get to 40!) Anyways, I love birthdays!
Mine was Thursday and Rachel's was Friday,
so we bought ourselves an ice cream cake!

How awesome is this? We had to go to the mall (yuck!) on my birthday to pick up something that Rachel ordered. While she was picking it up I found this, a purple sweatshirt with a quote from The Perks of Being a Wallflower, which I just finished! How wonderfully serendipitous! :)

The end of my internship search/match process!!
That's right, it is finally over! I got matched to an awesome site in Minnesota! Im excited to be closer to my family for a year and the training is going to be amazing...yay!!! (side note; Lisa and Mel, we are going to be neighbors!)

...its from a section where Charlie is feeling sad so he goes into his room and puts hid head under his pillow. I love it because, as an introvert myself, I feel this way often; like the only way to "reset" is to be in silence and let it do it's job.

My blog friend Lisa went on a solo trip to Paris for her 30th birthday and has been blogging all about it. I am so jealous! Museums, runs along the Seine, wine in Parisian cafes, ahh...sigh...

Im know, Im a bit late on the frenzy, but I've been hesitant. I've been told by so many people that I would love it, and that I have to see it...but I didn't know how I felt about romanticizing a serial killer. It was on my Netflix instant queue though and 1 episode turned into 2, which turned into 7, yikes! I could write a whole blog about my thoughts about the societal views on serial killers, sociopaths, and the "eye for an eye" mentality.....but I decided to turn my analytical brain off for 54 minutes at a time and just enjoy it, because it is an awesomely addicting show!!

Random Simple Pleasures {5th ed.}

Random Simple Pleasure #5 ~ Taking a shower when you are sick!
Yes, for 15 minutes you can feel like a human being again. No aches, no sneezing, no painful coughing, and breathing is even possible!! Its a wonderful little reminder every morning that all the disgusting cough syrup will eventually be worth it. 15 minutes of breathing without mucus and pain...yup, I love that!

Quotation Wednesday {7th ed.}

This is my favorite one yet!! For one thing, this is a mantra that I have been working hard on over the last year or so. Lets face it, I don't fit into society norms...and I am damn proud of my quirkiness!! :) Unfortunately though, I also place a lot of importance on people liking and accepting me. I came up against people this past year who were very threatened by my differences and therefore used them against me. I allowed their insecure defenses to morph into being insecure myself, and I am not proud of that...but it was a wonderful learning experience and I am now embracing my quirks even more! So, thanks Dr. Seuss for summing up the struggles of my past year perfectly, and with a rhyme!!
Also, I chose a Lady Gaga picture for a specific reason. I have always been a bit hesitant, no lets call it what it is, judgmental (that is hard for me to admit!) about her and her eccentric ways. But, I have seen a few interviews with her lately and have completely changed my mind. She epitomizes open-mindedness and is calling for an unjudgemental generational shift. She has such an eloquent way of stating this...while still being quirky and unique. Awesome!!

Happy Monday {21st ed.}

Happy Monday everyone! :)

Its so cute to see a dog running frantically at a park, crazy with excitement about which fun thing to do or sniff next! We went to his favorite park twice this week and he was so happy...and exhausted, which is always nice! :)

It was sunny here on Thursday (finally, no rain!) and it was so nice to be outside. I brought Domino to the park and we walked trails for about an hour, then I met a good friend to walk around Greenlake.....there is nothing better to beat the winter blues!

While we are on the topic of enjoying the (fingers crossed!) spring weather....I might as well mention how much I love Greenlake. Sorry to all you non-Seattleites, but this place is really awesome! Its very "Seattle" in that it is active, healthy, outdoorsy, and quirky :) I have seen people "walking" around the lake while hula-hooping, a guy who brought his chickens to the park with him, there is a guy who is often there teaching spanish....its just a great place!

I HATE Costco, hate it! Its hell for an introverted homebody like me. But I endure it every other week in the name of value. The only thing that helps me through it? The super cheap book section! Finding a good one makes the whole terrible experience worth it

Sick day and comfort food

Well, I caught the cold/flu that is going around the wonderfully dreary city of Seattle :( So, I sat around all day in my sweatpants feeling bad for myself....until I decided to make some "chicken" noodle soup!! There is nothing that screams comfort food more then chicken noodle soup when you are sick. I haven't attempted it at all since becoming a vegetarian, but after a little internet search I realized that it can indeed be done!! I combined a few recipes and this is what I came up with...

Chicken tofu! noodle soup

Ingredients ~
6-8 cups vegetable broth (I used half Imagine brand no-chicken broth and half vegetable broth)
1 block (8oz, I believe) of firm tofu (or other "fake meat" product, really though it doesn't need any meat substitute if you don't want it)
1 tablespoon olive oil (enough to fill bottom of stockpot)
3 large celery stalks, diced
3 carrots, cut into cubes/circles
2-3 garlic cloves, minced or diced
2 tablespoons grated ginger
5-10 large mushrooms, sliced
1 small red onion, diced
dill
oregano
basil
paprika
parsley
salt, and pepper (all to taste)
8oz (half a box) linguini noodles

Steps ~ 
1) Cut tofu into small cubes and marinate in broth and seasoning (I used the "no-chicken" broth and the seasonings above) for 2-3 hours
2) In a large stockpot, heat olive oil on medium and add carrots, celery, onion, mushrooms, garlic, and ginger. Add about 2 tablespoons of water and cover for 10 minutes.
3) While this is "steaming," heat the tofu cubes in olive oil and a little more seasoning. (This is mainly just to lock in the flavor, not to fry the tofu)
4) Add broth and spices to the stockpot and bring to a boil. Turn the heat back down to medium and add the tofu. Simmer for about 15 minutes.
5) Stir, and add the linguine noodles. Cover and heat on medium (or whatever keeps it at a rapid simmer) for about 10 minutes, or until the noodles are cooked. 
This makes about 8 big bowls, this bowl doesn't look so big in the picture, but it is one of those deep cereal bowls. Im not sure how it is going to keep, I have a feeling that the tofu and noodles are going to suck up the broth, but hopefully just adding some broth and/or water will fix that problem!

Yum!!! I am so happy that I can have "chicken" noodle soup again! :) Ok, now Im off to put myself to sleep with some Theraflu.....

As much as I hate giving dogs baths in a far too small and frustratingly unequipped tub. And despite how sad they look when they are getting a bath, it is pretty darn cute how happy they are when they are all fresh and clean!
